Microwaving your coffee changes it, and other lessons learned (while sipping espresso) in MIT’s coffee class

Jeffrey Grossman speaks with correspondent Adelaide Parker about “Coffee Matters,” a new MIT class that blends chemistry with hands-on brewing experiments. Grossman, from the Department of Materials Science and Engineering, says the class is a perfect example of his discipline in action. “That’s why it’s ‘Coffee Matters.’ It’s a matter,” he explains. “But now, how do you engineer it? How do you understand it? How do you see it and then change it?” The class uses the department’s newly opened Breakerspace laboratory to explore the science of coffee extraction, flavor compounds, and brewing techniques.
